Cheesy Quinoa Veggie Bites
Delicious and SUPER simple finger foods for your toddlers and kids that they'll love and you won't feel guilty about them eating "just a couple more". Baked in mini muffin tins, hassle-free, and with hidden veggies, parents will enjoy them too!

- 1 cup quinoa cooked & cooled
- 1 cup cheddar cheese shredded
- 1 cup frozen vegetables cooked & chopped
- 1/2 tsp. salt
- 1 egg
Preheat your oven to 350°F. Spray a mini muffin tin with cooking spray or oil.
Add all of the ingredients to a bowl and mix until thoroughly combined.
Divide the mixture evenly between the cups of the mini muffin tin, and press down to pack it in firmly.
Bake for 15-20 minutes, or until golden brown and crispy. Once cooled, just pop them out and enjoy!
